The Forged Katai Santoku knife 18 cm is the Japanese version of the chef's knife. The word "santoku" means "three virtues", a reference to the three cutting functions that the knife can perform: slicing, dicing and mincing. This diversity makes it an all-rounder in the kitchen. Unlike most Forged series, the Forged Katai knives are manufactured out of Japanese VG10 Steel with a hardness level of 60 Rockwell. All Forged Katai knives are forged by hand in 5 layers, have a blade thickness of 2 mm and an 18-degree cutting angle. In a luxury box. We provide a 10-year warranty. Also available in a 14cm version.
